Celebrate Mardi Gras the right way with two beignets recipes

Orange_blossom_beignets

Time to indulge! Mardi Gras is the perfect day to enjoy deliciously decadent beignets. Try these two recipes, one sweet and one savoury, from our Lausanne BG Café chef Richard Callet.

Orange blossom beignets
Every kid’s dream but not too sweet. Dip them in honey for extra yumminess.

Serves 8:

-    500 g flour + 1 pinch of salt
-    25 cl milk + 20 g Baker’s yeast
-    75 g soft butter
-    60 g sugar
-    Zest of 1 orange
-    2 eggs
-    1 tbsp orange blossom water
-    Icing sugar
-    Oil for frying

Knead the flour and salt with the butter and sugar.
Add the eggs and the yeast dissolved in milk. Mix with the orange blossom water and orange zest.
Flatten the dough to 1 cm thick and cut small circles.
Stir fry at 150° and sprinkle with icing sugar.
Serve with a few quarters of orange and a small bowl of honey.

Crab fritters, cherry tomatoes and basil dressing
These slightly spicy delicacies make the perfect amuse-bouche or starter.

Serves 8:

-    300 g flour
-    7 g baking powder
-    2 eggs
-    25 cl beer
-    400 g crab meat
-    1 red bell pepper
-    1 onion
-    5 sprigs thyme
-    50 g chopped chives
-    1 tbsp chili pepper jam
-    100 g cherry tomatoes
-    6 fresh basil leaves
-    20 cl olive oil
-    5 cl balsamic vinegar
-    Salt and pepper
-    Oil for frying

Dice the bell pepper and the onion. Cook for 5 minutes in olive oil. Add the thyme leaves.
Make the batter: mix together the flour and baking powder with the eggs and the beer. Stir well.
Add the crab meat, the bell pepper and onion mix, the chives and chili pepper jam. Season with salt and pepper.
Cut the cherry tomatoes into quarters and mix them with the oil, vinegar and chopped basil. Season with salt and pepper.
Drop spoonfuls of the fritter mixture into the oil heated at 150° and cook until golden.
Drain them and serve with the tomato dressing.
